Epic Breakfast Lasagna

Having a thirteen year old son means I experiment with a lot of different foods. Making massive meals with large portions to fill up a growing boy. I mean the kid already as an inch and a half on me and is freaking 3 shoes sizes bigger lol. So when you are housing a virtual Godzilla in your home and need ot feed him you go big! That includes breakfast. I want meals I can cook once and he can have for a few days.. lol easier on me =) Since he loves those stupid breakfast bowls from the store I wanted to come up with a way to take everything in them and just make it better. So I came up with this Epic Breakfast Lasagna! No lie I wish I had this around when I was a bachelor living on my own lol. So if you need to feed a single hungry teenager or don’t have one of those you can feed the whole family with this all encompassing breakfast.

I want to say yes I skipped Monday’s video but it was for obvious reasons… it was Christmas!! So I hope everyone had a great Christmas and enjoyed the time you spent with your families!

Do you need the most epic of breakfast recipes ever? Well this is it!

Ingredients
  1. 4 Cups Pancake Batter
  2. 1/2 lb. Breakfast Sausage
  3. 1/2 Cup Ham, Cubed
  4. 16 oz. Potatoes O'Brien
  5. 5 Eggs
  6. 1/4 Cup Milk
  7. 2 Cups Cheddar Cheese, Shredded
  8. 6 Bacon Slices, Cumbled
Instructions
  1. Pre-Heat Oven to 425 Degrees.
  2. Mix pancake batter or your choice per instruction.
  3. Use some non-stick spray and coat the bottom of your baking dish. Use a 1 Cup of Pancake Batter and coat bottom of baking dish, bake for 5 minutes. Do this 4 times to create 4 large pancakes. Make sure to re-spray between pancakes if needed.
  4. While pancakes are baking prepare Potatoes O'Brien as per instructions.
  5. In Medium bowl beat eggs and milk together adding salt and pepper to taste. In a heated pan on the stove top cook eggs until almost all moisture is out. You want to leave some as they will dry a little in the final baking.
  6. Brown the 1/2 lb. of breakfast sausage making sure it is cooked all the way through.
  7. Turn oven heat down to 325.
  8. In same baking dish pancakes were baked in layer ingredients in this order. Pancake, Potatoes O'Brien, 1/2 Cup Cheese, Pancake, Scrambled Eggs, Pancake, Sausage, Ham, Cheese, Pancake, Cheese, Crumbled Bacon.
  9. Bake for 25 minutes, until the cheese is completely melted.
