In a small sauce pan mix together the balsamic vinegar, and the brown sugar bring to a simmer and allow to cook for about 15 to 20 minutes so it can reduce down.
In a large bowl mix together tomatoes, onion, basil, salt and pepper with 1 Tbsp. of olive oil. Set aside until ready to use.
brush one side of each side of the bread slices with olive oil, then rub the oil with garlic.
Heat a pan over a medium heat. Place a slice of bread, oil side down top with sliced mozzarella, bruschetta mix, parmesan, and top it with the second slice of bread oil side up.
Cook a few minutes on each side so the bread is a crispy golden brown. Place on a plate and drizzle with the balsamic glaze.
