1/4CupPlain Greek Yogurt
1tsp.Lemon Juice
Salt
Pepper
8Cheddar Cheese Slices
2tsp.Chipotle Seasoning
1/2CupSun-Dried Tomatoes
Instructions
In a small bowl combine avocado, yogurt, lemon juice, salt and pepper. Mash to combine, it should end up nice and smooth.
Spread the avocado mix across the tortillas evenly leaving about a 1/2 inch gap at the edge of the tortillas. Top with 4 slices of cheese on each tortilla, next sprinkle each with with half of the chipotle seasoning, and last the sun dried tomato.
Tightly roll up the tortillas with the seams down, and slice into roughly 1 inch segments, and serve.
