Heat cast iron skillet, add 2 tablespoons of butter and allow to melt. Add Potatoes stirring occasionally cook until they begin to crisp and are golden brown. About 6 minutes, and remove them from the pan.
Salt and pepper your steak, add 2 more tablespoons of butter and melt. Add the steak into the pan and sear on each side, add mushrooms and cook until mushrooms begin to brown.
Add the potatoes back in and stir in the Italian seasoning. allowing to cook for another couple of minutes, top with blue cheese crumbles and serve warm.
