In a large pot, break up and cook sausage over a medium heat until it is browned. Transfer to a paper towel lined plate and set aside.
In the same pot add about 1 tablespoon of olive oil, add onion, shallots and carrot. Sauté for about 5 minutes, until the vegetables get soft. add the garlic and allow it to get fragrant about another minute.
Whisk in flour until there are no clumps, allow to cook for about 1 minute. Slowly whisk in the chicken broth until completely combined. Cook until it reaches a boil, tun down heat and allow to simmer for about 6 or 7 minutes.
Add sausage back into the pot along with the tortellini, spinach, half and half, Italian seasoning, salt and pepper. Continue to simmer until tortellini is cooked about another 5 minutes.
