Butterfly chicken breasts and cut them in helf, flattening them with a mallet to about 1/4 inch.
Place pretzels in a food processor and pulse until the are fine crumbs. Pour into a bowl, add in paprika, and salt and pepper to taste. In a second bowl beat eggs.
Heat about 1/4 inch of oil in a pan. coat each chicken breast in the egg, then the ground pretzel and place in heated oil. Allow to cook for about 4 minutes per side.
While the chicken is cooking melt butter in a small sauce pan. Add in flour and whisk together, allow to bubble and cook for about a minute. Slowly whisk in milk and allow to summer for about 5 minutes to thicken up. Turn down heat, add in cheese, mustard, paprika, cayenne and sal stand pepper to take.
Serve chicken and top with sauce, add a little parsley or red onion on top.
