In a pilon (mortar & pestle) add in the garlic, oregano, and olive oil. Mash it together until it is a nice paste. If you don't have one you can use a food processor.
Coat the pork chops in the garlic and oil paste evenly. Next sprinkle with both adobo and paprika on both sides.
In a pan/skillet heat about 1/3 Cup of vegetable or canola oil over a medium heat. Add in the seasoned pork chops and fry for about 5 to 7 minutes per side depending on the thickness.
