Clean the potatoes and cut into about 1/4 inch strips, and place in a large bowl. Using about 4 Cups of vinegar cover the potatoes. Make sure they are completely submerged in the vinegar. Set aside and allow to soak at least 30 minutes.
Drain vinegar and pat dry all the fries. Drizzle oil over fires and toss to coat. Load fries into the air fryer into single layer batches. Fry at 180˚F for about 18 to 20 minutes, flipping them over half way through.
Remove from the fryer toss in 1 tsp. of vinegar and salt to taste.
