How to make Steak, Poblano, and Mushroom Fajitas

Ingredients
  

Simple Guacamole:

  • 2 Avocadoes
  • 1/2 Red Onion Diced
  • 1/2 Cup Cilantro Chopped
  • Juice of 1 Lime
  • Salt

Fajitas:

  • 2 lb. Skirt Steak
  • 4 Tbsp. Olive Oil
  • 1/2 tsp. Pepper
  • 1.2 tsp. Oregano
  • 1/2 tsp. Paprika
  • 1/2 tsp. Cumin
  • 1/2 tsp. Chili Powder
  • 2 Poblanos Corder and Sliced
  • 2 Cups Baby Bella Mushrooms Cleaned and Sliced
  • 1/2 White Onion Sliced
  • 2 to 3 Garlic Cloves Minced
  • Juice from 1 Lime
  • salt
  • pepper
  • flour tortillas

Instructions
 

  • In a large bowl whisk together olive oil, salt, oregano, paprika, cumin, and chili powder. Place steak in the marinade mix and rub with the mixture until it is completely coated. Set aside for at least 30 minutes.
  • In a small bowl mash up the avocados. Add diced onion, cilantro, lime juice, salt, and mix until well combined. Set aside.
  • Heat a little oil in a skillet, place marinated steak into heated skillet. Sear on each side for about 3 to 4 minutes, until is browned. Place cooked steak on a cutting board and tent with foil.
  • In the same skillet add a little more oil and add poblanos and onions. Saúte for about 3 minutes and add mushrooms and garlic. Cook for about 3 to 4 minutes until vegetables are tender.
  • Slice the steak thinly against the grain, place the steak and all the juices back into the skillet with the veggies. Add lime juice and remove it from heat.
  • Add steak mixture in a tortilla add some guacamole and enjoy!
