Preheat oven to 400˚. Wash off potatoes, wrap in aluminum foil and place on a baking sheet. Bake potatoes for about 40 minutes to an hour.
While potatoes are cooking, make your bacon.
Once potatoes are done cooking reduce heat to 350˚ .
Carefully unwrap potatoes and quarter them. Place in a large bowl. Add 2/3 of your bacon, butter, sour cream, milk, 1 cup cheese, salt and pepper to taste.
Mash until they are nice and creamy. Transfer to a baking dish, top with the remaining cheese and bacon.
Place in the oven and back for another 20 minutes. Top with diced green onions and serve.
