Pre-Heat your oven to 400˚.
Lightly coat your sweet potatoes with olive oil. Sprinkle with a little bit of salt, wrap in tinfoil and bake for about an hour.
When potatoes are almost done. Heat a 2 tsp of oil in a pan/skillet. Crumble the Italian Sausage and sprinkle it with the red pepper flake. Cook until sausage is browned.
Add in chopped onions and cook until they are translucent. Add in the garlic, sun dried tomatoes and Italian seasoning. Allow ot cook for a couple of minutes, then remove from heat.
Once potatoes are done, carefully cut in half and scoop out the insides. Mix scooped potato into sausage, salt and pepper to paste.
Scoop the mixture back into the shelled potatoes and bake for another 15 minutes!
