Once bacon is crispy and fat is rendered add in green onion and allow to cook for about 5 minutes. Then add in chopped onion and allow to cook another 3-4 minutes until onion starts to become translucent.
Add in all the seasoning, jalapeño, garlic and shallot allow to cook for another couple of minutes and add in the steak-umms and cook until completely browned.
Add in cheese and mix until completely melted.
Place half of spicy Philly cheesesteak onto each tortilla and roll!!
