Peel and Chop potatoes into about 1" chunks. Add potato chunks to a large pot and cover with water, heat water and bring it to a boil and allow to cook until potatoes are tender, about 35 minutes.
Cook lasagna noodles according to package directions.
In a pan or skillet melt down butter and sauté onions in the butter until they are soft.
Pre-heat oven to 350˚.
Drain potatoes, and mash. Pour in butter and onions, salt and pepper to taste and, and about 10 oz. of cheese mix until completely combined.
Place layer of cooked noodles in the bottom of a 9x13" baking dish. Alternate layers of potatoes, and noodles ending with noodles on top.
Cover with foil and bake for about 35 minutes, uncover add the remainder of the cheese and bake until cheese is melted.
