In Medium bowl mix together mayo, Sriracha, honey and lemon juice.
Heat skillet over medium heat. Place quesadilla in pan, payer with 1/4 cup of cheese, shrimp and another 1/4 cup of cheese. Top with the second quesadilla.
Cook until golden brown on both sides.
Drizzle sauce over quesadillas.
Notes
For extra flavor toss shrimp in firecracker sauce.
