Lasagna Stuffed Meatloaf

Well it is snowing here.. a LOT! lol Well I guess that’s winter in the Chicago area right? So on these cold and snowy days you need something that is going to fill you up, keep you warm and OMG taste good right? Well I have an epic one for you with this Lasagna Stuffed Meatloaf! This is nothing short of freaking amazing. I know it is a little over the top but it tastes so good! It is totally worth it, and let’s be honest on a day like today over the top good tasting food is exactly what the doctor ordered lol. So go ahead guys give this one a shot, this little twist on meatloaf is worth it!

Ingredients
  1. 1 lb. Ground Beef
  2. 2 Eggs, Beaten
  3. 1/4 Cup Parsley
  4. 3 Garlic Cloves, Minced
  5. 1 Tbsp. Tomato Paste
  6. 2 Cups Ricotta
  7. 4 Lasagna Noodles, Cooked
  8. 1-1/2 Cup Marinera Sauce
  9. 1 Cup Mozzarella Slices
  10. Salt
  11. Pepper
Instructions
  1. Preheat oven to 350º F. In a large bowl mix together beef, bread crumbs, eggs, parsley, salt, pepper, garlic and tomato paste until combined.
  2. Mix together ricotta with salt and pepper to taste.
  3. Press 3/4 of mix into a loaf pan along the bottom and press up the edges keeping a well in the middle.
  4. In the well, layer lasagna followed by ricotta, mozzarella.  Repeat until well is filled (3 or 4 layers).
  5. Cover with remaining meat to seal.
  6. Bake for 30-40 minutes covered with foil. Take out and flip over onto a tray.  Top with tomato sauce and more mozzarella.  Bake in the oven until golden brown and bubbly.
