Preheat your oven to 400˚F. Wrap potatoes in foil, and place in the oven for at least an hour.
While potatoes are baking, bring a pot of water. toa boil, place a strainer over the pot and place broccoli in. Allow to steam for about 4 to 5 minutes, until it is crisp and tender. Remove from heat and chop.
Slice the tops of the potatoes off and scoop insides of potatoes into a bowl, Add in sour cream, broccoli, 1 Cup of cheese and salt to taste. Mash until smooth.
Scoop mashed potatoes back into hollowed out skins, stop with remaining cheese, and place back in the oven for another 10 minutes.
