How to Make Cookie Butter Brownies

Total Time 39 minutes
Course Dessert
Cuisine American
Servings 9 Servings

Ingredients

  • 15 to 20 Biscoff Cookies
  • 4 oz. Semi-Sweet Chocolate Chips
  • 1/2 Cup Butter
  • 1 Cup Sugar
  • 2 Eggs
  • 1/2 tsp. Vanilla
  • 3/4 Cup Flour
  • 1/2 Cup Cocoa Powder
  • 1/2 Cup Cookie Butter
  • Salt

Instructions

  • Pre-heat your oven to 350˚F. Place parchment paper into an 8×8 baking dish and line the bottom with Biscoff cookies.
  • Place chocolate chips and butter into a microwave safe bowl, and heat in the microwave for about 20 seconds at a time until melted and stir together.
  • Pour mixture into a larger bowl, stir in sugar, eggs and vanilla. Once combined add in the salt, flour, and cocoa powder and continue stirring until combined.
  • Pour batter over cookies in the baking dish. Next spoon cookie butter over the top of batter and carefully smooth out. Place in the oven and bake for about 25 to 30 minutes. Or until is cooked, check by sticking a tooth pick in and checking to make sure nothing sticks to it. This is a very moist brownie so you may need extra time depending on your oven.
  • Remove from the oven and allow it to cool for about 10 minutes, before removing form the pan and cutting into 9 pieces.
