Sweet Potato Bacon Fritters

I haven’t done one of my healthier recipes in a long time. Even more I haven’t done a healthy breakfast in like… well forever! So I decided to do a video on my Sweet Potato Bacon Fritters. This is a cool little breakfast side that will give you those all important carbs to start your day off right. Let’s be honest Sweet Potatoes are simply … AWESOME (come on you knew that was coming) and totally fun to work with. So go ahead scramble up some eggs make these fritters and enjoy this cool little breakfast =)

Sweet Potato Bacon Fritters Recipe

Ingredients
  1. 6 Bacon Strips, Crumbled
  2. 2 Medium Sweet Potatoes, Peeled
  3. 3 Green Onions, Chopped
  4. 2 Eggs
  5. 3 Tbsp. Coconut Flour
  6. 1 tsp. Paprika
  7. Salt
  8. Pepper
Instructions
  1. Fry bacon until crispy, remove from pan but leave bacon fat in the pan, crumble bacon.
  2. Peel and grate Sweet Potatoes. Place shredded potatoes in a medium bowl.
  3. Add crumbled bacon, chopped green onions, whisked eggs, Coconut Flour, salt and pepper to bowl. Mix everything together until completely combined.
  4. Scoop roughly 1/4 Cup of mixture and place on parchment paper and gently flatten so they are about 3/4" thick.
  5. Heat 1/4 Cup of olive oil mixed with the remaining bacon fat on Medium-Low.
  6. Cook fritters in heated skillet for about 3 minutes per side.
