This Puerto Rican recipe is really easy to prepare and is very versatile. Sorullitos de Maiz can be prepared with or with out the cheese to very flavor. They are great with a breakfast coffee then keep a couple for a lunch snack, but let’s be honest they wont last because other people will just grab your stash lol.

Sorullitos de Maiz / Puerto Rican Corn Fritters Recipe

Ingredients
  1. 2 Cups of Water
  2. 1/2 tsp. Salt
  3. 1/4 Cup sugar
  4. 1-1/2 Cup Fine Cornmeal
  5. 4 oz. Gouda Cheese, Shredded
Instructions
  1. In medium sauce pan, bring water to a boil. Remove from heat and stir in salt, sugar, and cornmeal. Return to heat and cook fro 2 - 3 minutes, stirring constantly, until dough does not stick to the pot.
  2. 2. Remove from heat and stir in cheese. Let sit for 5 minutes, or until cool enough for you to handle them. Roll in to small cigar shapes.
  3. 3. In a large skillet heat 2 cups of oil to 375 degrees (or if using a deep fryer like me just set to 375), cook sorullitos 4-6 at a time, making sure not to crowd the pan until lightly golden brown.
Notes
  1. That's it a super simple Puerto Rican appetizer for you!
