Skillet Beef Fajitas

I have been doing some great latino food lately, whether it be Puerto Rican or Mexican I have been hitting those cuisines and making some really fun and cool stuff. So I decided hey let’s go back to that well again lol. Today I am making some Skillet Beef Fajitas (FYI I can no longer type Fajitas without hearing Peter Griffin from Family Guy miss pronouncing it lol) Anyway back to the task at hand =) These fajitas are a really fast and simple recipe. I mean come on most of my recipes are those two things, fast and simple. This one is a nice light meal that will leave you completely satisfied.

  1. 1-1/2 lbs. Flank Steak, Sliced
  2. 1 Lime, Juiced
  3. 1/2 tsp. Chili Powder
  4. 1/4 tsp. Cayenne
  5. 1/8 tsp. Cumin
  6. 1/8 tsp. Paprika
  7. Pepper
  8. Salt
  9. 1/2 tsp. Oregano
Vegetables
  1. 2 Tbsp. Coconut Oil
  2. 1 Yellow Bell Pepper, Sliced
  3. 1 Red Bell Pepper, Sliced
  4. 1 Yellow Onion, Sliced
  5. 1 Garlic Clove, Minced
  6. 5 oz. Shitake Mushrooms
  7. 2 Green Onions, Sliced
  8. 1 Cup Vegetable broth
  9. 1 Jalapeno, Sliced
