Pork Chops with Candied Walnut Butter

So I am trying to do more website exclusive recipes. Stuff that doesn’t require you to go to YouTube and watch videos lol. So I figured if I am going to do recipes exclusive to this site I will make them full meals. Not just one part of a meal or a small appetizer but let’s go ahead and make what I am making for dinner tonight This one was a great Pork Chops with Candied Walnut Butter, then I went ahead and roasted a little bit of Acorn Squash. This is one of those recipes that is honestly pretty simple even though the finished product looks like a lot of time was spent on it. Go ahead and make this one and every one will think you are slaving for hours over the stove creating a gourmet meal lol… when in fact it is super easy =)

Ingredients
  1. 6 oz. Butter
  2. 1 Acorn Squash
  3. 2 Tbsp. Walnuts, Chopped
  4. 2 Pork Chops, Bone In
  5. 3 Tbsp. Parmesan Cheese, Grated
  6. Salt
  7. Pepper
  8. 2 tsp. Sugar
  9. 2 Tbsp. Parsley
Instructions
  1. Preheat oven to 425 degrees
  2. Carefully cut acorn squash in half from pole to pole. Use a spoon to scoop out strings and seeds. Cut halves into 1⁄2” slices. Coarsely chop walnuts. Pat pork chops dry, and season both sides with salt and pepper.
  3. Place squash slices on prepared baking sheet. Drizzle with 2 tsp. olive oil and season with salt. Toss to combine and spread into a single layer. Sprinkle squash with Parmesan and roast until tender and lightly browned, 20-25 minutes.
  4. Place a small non-stick pan over medium heat. Add sugar and 2 Tbsp. water to hot pan and stir to dissolve. Add walnuts and stir constantly until water has evaporated and walnuts are shiny and sticky, 2-3 minutes. Transfer to a plate or cutting board and cool 5 minutes. When walnuts are cool enough to handle, break into small pieces.
  5. Place a medium non-stick pan over medium-high heat. Add 1 tsp. olive oil and pork chops to hot pan. Cook until well- browned and chops reach a minimum internal temperature of 145 degrees, 4-5 minutes per side. Remove from pan and rest 5 minutes before serving.
  6. In a mixing bowl, stir softened butter, candied walnuts, and parsley until well- combined.
