Soup time! I was in the mood for a comfort food soup this time around. When looking through my recipe binder I knew almost instantly what I was in the mood for…. My Lasagna Soup!! OMG I love this soup so much! This is a great and filling soup that is perfect for a chilly day. The great thing is this soup isn’t just a side dish this one IS a meal of it’s own. It is one of those really filling and amazing tasting soups that no one can resist. Go ahead it is getting pretty chilly out and I know you want those great warming recipes that are easy and the family will dig into!

Soup
  1. 1 lb. Ground Beef
  2. 1 Onion, Diced
  3. 4 Garlic Cloves, Minced
  4. 1/4 tsp. Red Pepper Flakes
  5. 24 oz. Pasta Sauce
  6. 8 Cups Chicken Broth
  7. 14 oz. Crushed Tomatoes
  8. 2 Tbsp. Tomato Paste
  9. 2 tsp. Balsamic Vinegar
  10. 1-1/2 tsp Sugar
  11. 1 Tbsp. Basil
  12. 1 tsp. Parsley
  13. 1 tsp. Oregano
  14. 1 tsp. Bay Leaf
  15. Salt
  16. Pepper
  17. 10 Lasagna Noodles, Broken
  18. 1/2 Cup Heavy Cream
Cheese Topping
  1. (Optional)
  2. Shredded Mozzarella Cheese
  3. Parmesan Cheese
  4. Ricotta Cheese
Instructions
  1. 1. Heat large Dutch oven/large soup pot over medium high heat. Add beef and onion and cook, stirring occasionally until beef is browned. Add garlic and red pepper flakes and sautee for 30 seconds. Drain off any excess fat.
  2. 2. Add Pasta Sauce, 6 cups chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, spices and lasagna noodles. Bring to a boil then reduce to a simmer until lasagna noodles are tender, stirring occasionally about 20-30 minutes.
  3. 3. Stir in heavy cream and remaining chicken broth. Garnish individual servings with desired amount of cheeses.
