How did I decide to make Healthy Pulled Pork Sliders? well…… Being Puerto Rican there are a lot of great recipes that is native to our cuisine. Sometimes though I like to take those recipes and mix them up a little bit. You know make something with that Puerto Rican flare but that could still be right at home on a midwest dinner plate. Well add to that you want to stay healthy lol. Yup that is a bit of a mix of different styles and flavors. 

I have always LOVED some awesome pulled pork sliders, so why not start there? My other love an awesome Jibarito, my favorite dish to order out when at a Puerto Rican restaurant. That’s where the idea of this one comes from. Like a Jibarito I took a basic tostone instead of a bun, then went from there building a really fun fusion recipe. The best part of this one though is this works with a Paleo/Whole 30 diet! Yes you did read that right =) so no need to feel guilty or have a cheat day. This one is that good.

Paleo Pulled Pork Sliders

A great Paleo/Whole 30 recipe with just a hint of Puerto Rican flare.

Pulled Pork
  1. 3 lbs. Pork Shoulder
  2. 1 Tbsp. Chili Powder
  3. 1 tsp. Paprika
  4. 1/2 tsp Cumin
  5. 1/2 tsp. Chipotle Pepper Spice
  6. Salt
  7. 1 Garlic Clove, Minced
  8. 1 Cup Chicken Stock
Sliders
  1. 2-3 Cups Pulled Pork
  2. 2 Green Plantains
  3. 6 Tbsp. Avocado Oil
  4. Salt to Taste
Chipotle Sauce
  1. 1 Cup Coconut Milk
  2. 1/2 tsp. Chipotle Chili Pepper Spice
  3. 1 tsp. Liquid Smoke
  4. 1/4 Cup Fresh Cilantro
For Pulled Pork
  1. Place all of the seasonings in a small bowl and mix well to make the rub.
  2. Massage the spice rub all over the meat. Wrap and refrigerate for 20 minutes.
  3. Place pork into the slow cooker, pour the chicken stock in.
  4. Cook on low for 8 hours.
  5. Remove pork from slow cooker, shred with two forks, tongs or by hand.
For Plantain Buns
  1. Score the plantain lengthwise along one of the ridges, use this to remove the peel. Slice Plantain into 1 inch pieces.
  2. Heat 4 tbsp. of Avocado Oil in skillet.
  3. Once oil is hot add sliced plantain pieces. Allow to fry until they start to brown, roughly 2 minutes. Fry again for another 2 minutes, then remove from heat and place on a paper towel
  4. Allow to cool enough to handle, then smash plantains. I put a piece of wax paper on my cutting board and used the bottom side of a plate to smash them down.
  5. Heat skillet again add remaining Avocado Oil to pan. Fry flattened plantains for about 1-2 minutes per side.
  6. Transfer to paper towel and lightly sprinkle with salt.
For Chipotle Sauce
  1. Mix coconut milk, Chipotle Pepper Spice, Cilantro, and Liquid Smoke in blender or food processor.
Build Sliders
  1. Use cooked plantains as buns, place some pulled pork on plantains and then pour chipotle sauce over the top and then enjoy!
