As we get into the fall, we start leaning more towards that comfort food. So I figure why not share one of the healthier comfort foods I make. SinceI just put out that great Chicken Parmesan Lasagna lets go ahead and keep going Italian with this one. Go ahead making this Healthy Chicken Alfredo Bake isn’t a difficult recipe and it is a great healthy twist on an old favorite. So go ahead give this one a shot, you guys will love it and you will thank me for putting this healthy version out there =)

- 2 lb. Cauliflower
- 1 Tbsp. Olive Oil
- 1/3 Cup Red Onion, Diced
- 1/2 Tbsp. Oregano
- 1 Tbsp. Garlic, Minced
- 4 Cups Spinach
- 1-1/2 Can (19oz.) Coconut Milk, Full Fat
- 1/2 Cup Parmesan, Grated
- 3 Chicken Breasts, Grilled
- 8 Tbsp. Bread Crumbs
- + 4 Tbsp extra Parmesan for topping
- Set oven to 400F.
- Add Cauliflower to a food processor and pulse blend to create cauliflower "rice".
- Sauté onion, garlic, oregano for 2 to 3 minutes until they turn brown and translucent. Add the spinach and cook for about 2 minutes until it wilts. Add the cauliflower rice and fold everything together. Cook for 2 minutes.
- Lastly, add coconut milk, parmesan, pepper and cooked chicken (as well as the optional fresh basil).
- Evenly divide the filling into small baking tins or a large casserole dish. Top with panko and parmesan. Lightly spray the top with a little coconut oil before baking.
- Bake for 25 minutes or until the top is golden brown and crunchy.
