I love onion rings.. I mean REALLY love onion rings lol. So I like playing around with them and trying different types I find. This is one I ran across about a year ago and have made a few times. These Guacamole Stuffed Onion Rings are OMG so freakin’ awesome. Let’s be honest though anything that has some fresh Guacamole is a step ahead anyway lol. If you are ready to take your appetizer or snack game up a level this is an easy recipe that will totally do it for you. - 4 Avocados, Ripe
- 1/2 Cup Red Onion, Diced
- 1 Jalapeno, Seeded and Diced
- 2 Tbsp. Cilantro, Chopped
- Salt
- Pepper
- Juice from one Lime
- 2 Large Yellow Onions
- 8 oz. Monterey Jack Cheese, Cubed
- 1-1/2 Cups Flour
- 1 tsp. Cumin
- 1 tsp. Paprika
- 1/2 tsp. Cayenne
- Salt
- Pepper
- 3 Eggs, Beaten
- 1 Cup Panko
- 1 Cup Tortilla Chips or Strips, Crushed
- 1 Poblano Pepper
- 1/2 Cup Sour Cream
- 1/2 Cup Mayonnaise
- 1 Garlic Clove
- 1/4 Cup Cilantro
- 2 Tbsp. Lime Juice
- Salt
- Pepper
- In a large bowl , add the avocados and mash into a chunky paste. Add the red onion, jalapeño, lime juice and cilantro; stir until everything is combined. Set aside.
- Cut the yellow onions into 1-inch slices, pull out 15 to 20 rings and place onto a baking sheet lined with parchment paper.
- Fill the inside of each onion ring using about 3 tablespoons of guacamole. Insert a cube of cheese into each ring and freeze for at least 30 minutes, or until solid.
- In a shallow baking dish, whisk together the flour, cumin, paprika, cayenne, salt and pepper. Add the eggs to another shallow dish and then the breadcrumbs and crushed tortilla chips into a third dish. One by one, dip each frozen onion ring into the flour, then eggs and finally breadcrumb mixture.
- Heat the oil to 350 degrees F in a large heavy-bottomed sauce pot and fry the onion rings in batches until golden brown, crispy and warmed throughout. Transfer to a paper towel-lined plate and season with an extra pinch of salt.
- Add all of the ingredients to a food processor fitted with the blade attachment and process until smooth. Transfer to a small bowl, cover, and refrigerate until needed.
