Crispy Cheese and Bacon Potatoes

Wow! 450 recipes!! That’s a lot lol. So what do I have for the big 450th? I have a great tasting and super simple comfort food recipe. Crispy Cheese and Bacon Potatoes are some of the best and easiest sides you will ever make. Literally the only problem I have with these is how fast they go. My son Anthony destroys these before they are ever even served. It is easy to see why it goes so fast though, bacon, potatoes, cheese.. seriously what’s not to love on this one. So guys go ahead and make this one with dinner I know it will be a complete hit!

And thanks for putting up with me for 450 freaking episodes LMAO!

Ingredients
  1. 1/2 lb. Bacon
  2. 3 Large Russet Potatoes
  3. Salt
  4. Pepper
  5. 1-1/2 Cups Cheddar Cheese, Shredded
  6. 3 Green Onions, Diced
Instructions
  1. Place Bacon on wire rack on a large rimmed cooking sheet, bake at 400 degrees until Bacon is at your desired crispness. Crumble and set aside until ready to use.
  2. While the bacon is cooking, peel and chop the potatoes.
  3. There should be 2-3 tablespoons of bacon grease left on the sheet pan. Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
  4. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving.
