Sometimes there is nothing as fun as playing with burgers. Seeing what kind of flavors you can pull from them. If you scroll through my videos you can easily see I make Burgers more than anything else hands down lol. Honestly I have toyed with the idea of an e-cookbook, the two things that always come up is either Puerto Rican Cuisine or… Yup Burgers. Well this time around I am doing some thing a little different that I know will quickly become a favorite once everyone tries it. This Chipotle Cheddar Burger on it’s own is an amazing burger you would love but I go ahead and top it with Elote/Mexican Street Corn Fritters. It is a very different style burger OMG it is so worth the time it takes to make. So go ahead guys give this burger a shot and I know you will be thanking me later.

- 1 lb. Ground Beef
- 1 Tbsp. Lime Juice
- 2 Garlic Clives, Minced
- 2 Chipotle Chiles in Adobo, Minced
- 1 tsp. Brown Sugar
- 1 tsp. Oregano
- 1 tsp. Cumin
- 1/2 tsp. Paprika
- Salt
- Pepper
- 4 Slices Sharp Cheddar Cheese
- 4 Brioche Buns
- 1 Avocado, Sliced
- 1/2 cup Mayonnaise
- 1 Chipotle Chile in Adobo, minced
- 1 Jalapeno, Seeded and Minced
- 2 Green Onions ,Chopped
- 3/4 cup Flour
- 1/2 tsp. Baking Powder
- 1 tsp. Chili Powder
- 1 tsp. Paprika
- Salt
- Pepper
- 1/2 Cup Milk
- 1-1/4 Cups Sweet Corn about 2 ears
- 1/3 Cup Cilantro, Chopped
- 4-6 oz. Cotija Cheese
- Place ground beef in large bowl, add lime juice, garlic, chipotle chiles, brown sugar, oregano, cumin, paprika, salt and pepper.
- Mix completely and form four equal patties.
- Heat grill to high, grill to desired temperature.
- Add cheese with about a minute of cook time left.
- Place ingredients in bowl and mix until combined
- In bowl add flour, baking powder, chili powder, paprika, salt, pepper and milk.
- Stir until combined, fold in corn, cilantro and cotija cheese. It should end up like a thick pancake batter.
- In sauce pan add oil, heat on medium high.
- Add1-2 Tbsp. of batter and fry for 1 to 2 minutes per side until golden brown.
- Remove and allow to drain on a paper towel.
- Spread mayo over bottom bun, next place the burger patty, then sliced avocado and lastly elote fritters. Top off with top bun and enjoy!
