BLT Soup

While I like soups a lot I also love some great comfort food. So I love taking established soup recipes and twisting them around a little bit so they are fun, comfort food that tastes.. well you know Awesome! lol. One of the things I loved eating all the time was BLTs, yup sometimes nothing beats an amazing BLT Sandwich. So I figured why not find away to make that great little sandwich into a soup. Well here you go a great creamy BLT Soup recipe. This is a cool little, great tasting soup that is a perfect little late fall or winter recipe. Filming it this time I was having a get together with friends, if you check out my Facebook page you can see the whole lay out from that night lol, but this went so fast it was devoured almost in an instant! BLT Soup Recipe

The perfect soup for a chilly fall night.

Ingredients
  1. 5 Bacon Slices
  2. 2 Tbsp. Butter
  3. 2 Garlic Cloves, Minced
  4. 3-1/2 Cups Kale (or you can use Escarole also)
  5. 1/2 Cup flour
  6. 3-1/2 Cups Water
  7. 1 tsp. Chicken Boullion
  8. 3/4 Cup Tomatoes, Chopped
  9. 1/8 tsp. Nutmeg
  10. 1/4 tsp. Cayenne
  11. Salt
  12. Pepper
  13. 1 Cup Half & Half
  14. Croutons (optional)
Instructions
  1. Heat pot over medium high heat.
  2. Add bacon and cook until crispy.
  3. Remove bacon from pot and drain on paper towels, reserve 1 teaspoon of bacon fat.
  4. Melt butter in pot, add garlic and sauté until fragrant.
  5. Add flour and stir until a paste forms.
  6. Add water and bouillon, stir until it's combined with flour mixture.
  7. Add tomatoes, kale, nutmeg, cayenne, salt and pepper.
  8. Bring to a boil, reduce heat and simmer for 6 minutes.
  9. Add half and half and stir to combine.
  10. Stir in bacon.
  11. Top with croutons.
