Bacon Beer Cheese Soup

You guys know in the winter I like to put out a weekly soup recipe. This week is no different, but if you haven’t been able to tell over the last few episodes I have been on a bit of a bacon kick lately lol. So I went back to bacon for this soup, more specifically a Bacon Beer Cheese Soup. This is perfect for that Sunday afternoon game with everyone over. This is a nice hearty, thick soup with an awesome rich flavor that will please any and all of your guests (or family if just making it for dinner lol). On top of all of that is BACON!! I mean Bacon!! Lol It is a soup with bacon! The only real problem with this one is you might have to make a double batch with how fast it will go. Ingredients
  1. 6 Bacon Slices
  2. 1 lb. Chicken Breast, Chunked
  3. 4 Tbsp. Butter
  4. 1/4 Cup flour
  5. 2 tsp. Garlic Powder
  6. 1 tsp. Cayenne Pepper
  7. 1 tsp. Paprika
  8. 1 tsp. Worcestershire Sauce
  9. Salt
  10. Pepper
  11. 1 Cup Beer
  12. 1 Cup Chicken Broth
  13. 2 Cups Half & Hald
  14. 8 oz. Cheddar Cheese, Shredded
Instructions
  1. Warm an large pot over medium-high heat. Cut bacon into the pot.  Cook bacon until it's crisp, stirring occasionally. Meanwhile, cut the chicken into bite size pieces.
  2. Using a slotted spoon, remove bacon from pan draining the drippings into the pan as you take out the bacon. Place the bacon inside your upside-down pot lid (or on a plate). Add chicken pieces into bacon grease to cook, sprinkle with 1 /2 teaspoon salt. Stir occasionally until chicken is completely cooked through. Remove chicken from the pot with a slotted spoon and place on the upside-down pot lid with bacon.
  3. Cut butter into 1 tablespoon pieces and add to pan drippings. Stir until melted. Whisk in flour and seasonings. Allow to cook for 1 minute, whisking frequently, to cook out the floury taste. Add beer and whisk to combine and cook for 2 minutes. Add chicken stock and half-and-half.  Whisk to combine and reduce heat to medium. Slowly add the cheese, if you add the cheese too quickly it can become grainy, so add a little at a time whisking until it is incorporated. Stir until you have a smooth mixture.  Add Worcestershire sauce and return chicken and bacon back to the pot.  Stir to combine.
  4. Allow to simmer until ready to serve, stirring occasionally.
