When I started cooking and filming my dad’s Puerto Rican recipes there was one that I kept getting a request for over and over. I avoided it for a while because I wanted to play with new recipes, I guess I just didn’t realize how loved Arroz con Pollo really is. Now if you aren’t Puerto Rican or don’t speak or read Spanish, Arroz con Pollo is Puerto Rican Chicken and Rice. This is a staple of the Puerto Rican diet and can be found at any and every Puerto Rican restaurant. I know very few Puerto Ricans who didn’t have this as dinner MANY times in their lives. So if you want to try your first Puerto Rican recipe this is a great place to start or if you are a life long eater of Puerto Rican cuisine and are just trying to learn to make it again this one is perfect for you.

Cuando comencé a cocinar y filmar las recetas puertorriqueñas de mi papá había una que seguía recibiendo una solicitud para una y otra vez. Lo evité durante un tiempo porque quería jugar con nuevas recetas, supongo que no me di cuenta de lo amado que Arroz con Pollo realmente es. Ingredients
  1. 3 Tbsp. Oil
  2. 2 lbs. Chicken Legs or Thighs
  3. Salt
  4. Pepper
  5. 1 Small Onion, Diced
  6. 1/4 Cup Green Olives, Chopped
  7. 2 tbsp. Capers
  8. 12 oz. Tomato Sauce
  9. 2 Cups Uncooked Rice
  10. 4 Cups Water
  11. 1/2 Cup Sofrito
